Peel Estate Winery is iconic in the Peel Region. Having been established in 1979 by current vigneron and owner Will Nairn, it is the first and oldest in the Region.  Thanks to our Mediterranean microclimate, the estate consistently produces an outstanding portfolio of red, white, sparkling, and fortified wines.  Will has spoken with us before and is a wealth of knowledge and experience which provides a valuable insight into his wine making.

Fallow refers to the farming term when the land is ploughed and harrowed but left for a period without being sown to restore its fertility or to avoid surplus production.  Fallow chefs use it to talk about any underused resource; a name that fits the ethos and mission of the restaurant.

Their menu features modern British cuisine and highlights bold flavours with a focus on conscious usage of British produce.  This will be paired with aged iconic wines.

We look forward to enjoying both museum and back vintage wines from the Estate and pairing these with the courses at Fallow.
